Nachos I

Ingredients :

  • 8  oz. (250 g) lean italian sausage
  • 8  oz. (250 g) lean ground beef
  • 2 cloves garlic, minced
  • 2  tsp. (10 mL) cajun seasoning (or chili powder)
  • 2 tbsp. (25 mL) coarsely chopped jalapeño peppers (pickled or fresh)
  • 1 tomato, chopped
  • 3 green onions, chopped
  • 2 tbsp. (25 mL) chopped fresh coriander (cilantro)
  • 1 tbsp. (15 mL) lime juice
  • 1 bag (345 g) tortilla chips
  • 1  cup (250 mL) shredded old cheddar cheese

Cooking Procedures :

  1. Preheat oven to 375°F (190°C). Prepare a large rimmed baking sheet; set aside.
  2. Squeeze out sausage from casings into a large skillet. Add ground beef and sauté over medium-high heat, breaking up with spoon and cook until no longer pink for about 5 minutes. Drain off fat.
  3. Add garlic and Cajun seasoning (or chili powder). Sauté for 2 minutes until softened. Turn off heat. (Make-ahead: Let cool for 30 minutes then refrigerate in airtight container for up to 24 hours.)
  4. Add jalapeño peppers, tomato, green onions (leave some for garnishing), coriander and lime juice; stir to combine.
  5. On prepared baking sheet, arrange tortilla chips in single layer. Sprinkle with sausage mixture and cheese. Add another layer of tortilla chips, sausage mixture and cheese.
  6. Bake in oven until cheese is melted, about 6 minutes.
  7. Remove from the oven then garnish with green onions.
  8. Serves 10.
