Indonesian Marinade

Ingredients :

· 5 to 7 cloves garlic, minced
· 4 scallions or 5 shallots, finely chopped
· 4 tbsp. dark brown sugar
· grated zest and juice of 2 lemons
· 2 to 3 green jalapeño chilies, finely chopped
· 1/3 cup soy sauce
· 1/2 tsp. turmeric
· 1 tbsp. ground coriander
· 3 tbsp. finely chopped fresh ginger
· 1 cup peanuts, ground or finely chopped

Cooking Procedures :

MIX all the ingredients in a shallow dish.

ADD the chicken pieces, turn to coat well and marinate for 3 to 4 hours at room temperature, or up to 48 hours in the refrigerator.

The marinade is enough for 4 small Cornish hens or 3-1/2 lb. chicken pieces.
